1. Separate the whites from the egg yolks. Place the egg whites in a bowl and beat with a
balloon whisk or an electric hand whisk until the egg whites form soft peaks that just droop over.
2. Add a tablespoon of sugar and whisk until the mixture is consistently strong. Place it on a
baking tray with parchment paper. With a spoon create a hole in the middle. Place it in the oven
for 10 minutes at 350oF.
3. Slice two apples into thin slices. In a frying pan add a tablespoon of butter, when melted add
the apples, 1 tablespoon of ground cinnamon, two tablespoons of brown sugar and a spoonful
of lemon juice. Mix during 5 to 7 minutes until the apples turn golden and the sugar is totally
melted. Remove from the stove and put the apples mix in the refrigerator for 10 minutes. You
don’t want to add the apples very hot to the egg whites or they will melt.
4.To finish, place the apple mix over the egg whites and garnish with cinnamon powder and
lemon zest. Serve it with a vanilla ice cream scoop and enjoy your delicious and unique Cloud
Eggs Apple Pie.
