Are you wondering how to cook the perfect cast iron steak? There are so many ways to cook a steak; from the grill, the oven, or the stove top. One of our favorite ways at Recipes4theWeek is using the cast iron to cook our steak. We use a combination of the stove top to the oven to get that perfect medium, pink center.

  • Preheat the oven to 450 degrees

  • Lightly coat steak with oil, this lubrication will help conduct heat from the pan to the meat as fast as possible. (Note: Choose oil with high smoke point)

  • Next, season the steak with black pepper and salt. The oil will help hold the seasonings in place. Let the seasonings rest on the steak for at least 15 minutes before cooking.

  • Place tablespoon of oil in cast iron, heat on burner over medium-high heat. The oil should start to shimmer but it should not be smoking. We want it hot enough to sear the steak.

  • Place steaks in the pan, they should sizzle. Cook on one side for 2 minutes, flip the steaks. Cook additional 2 minutes on other side.

  • Transfer the cast iron to the oven. Cook for additional 4-5 minutes for a medium pink center.

  • Remove from oven, place on cutting board, and let rest for 10-15 minutes.

  • Add a spoonful of butter to the top, if desired.
