RED, WHITE, AND BLUE TRIFLE
An all-time holiday or potluck favorite! With its festive colors and appetizing presentation, it is the perfect dessert for holidays or every day! It is so simple to prepare it will become a staple and so delicious that your family and guests will not believe it is sugar free! This recipe serves approximately 6-8.
1 pint fresh blueberries, washed and dried
1 pint fresh strawberries, washed and dried
2 tubs sugar-free whipped topping
1 package sugar-free shortbread cookies
1 tbsp red and/or blue decorative sprinkles (optional)
Trifle dish or glass serving dish
Break all cookies in half. Cut strawberries into bite-sized pieces (about fourths). Place 1/3 of cookies in bottom of the dish. Arrange 1/3 of strawberries and blueberries over cookies. Top with 1/3 of the whipped topping. Repeat two more times. Sprinkle red or blue decorative sprinkles over top. Serve and enjoy!
Refrigerated after preparation. You can also substitute bite-sized pieces of pound cake in place of the cookies for another version.
SUGAR-FREE BANANA SHAKE
It doesn’t get any easier than this! This recipe will have the kids begging for more; and with only five simple ingredients, it will be one of your favorites too! Terrific for sipping while enjoying family movie night. Recipe serves 2, but you can easily make as many as you want in a matter of minutes!
2 tsp vanilla extract
2 cups sugar-free vanilla frozen yogurt or ice cream
1/2 cup 2% milk (adjust according to desired thickness)
Tub of sugar-free whipped topping.
Place all ingredients into a blender. Blend at high speed until smooth and creamy. Add extra milk to thin as desired. Pour into mugs and top with a dollop of whip cream. Serve and listen to the oohs and aaahs!
For chocolate lovers, simply add a tsp of cocoa powder to create a sugar-free chocolate-banana shake for a little extra zing without breaking the calorie bank!
Who doesn’t love food on a stick? Now you can hand your kids a cool treat without the added side of guilt. Perfect for those sweltering summer days when you need to cool off quick. A great alternative to those sugary popsicles or the neighborhood ice cream truck!
1 cup sugar-free cranberry juice
1 frozen banana
1 cup frozen strawberries
1 cup frozen fruit of choice (blueberries, peaches, or pineapple all work nicely)
1 container sugar-free strawberry yogurt
Popsicle mold (or Dixie cups and popsicle sticks)
Place juice in the blender. Add yogurt. Add fruit. (We find it blends better if added in this order). Blend on high until very smooth (the longer the better). Pour mixture into molds or Dixie cups and freeze until solid. If you are using the cups, you will want to wait about 45 minutes to an hour until partially frozen before inserting the sticks. Serve at leisure!

LOW-SUGAR JELLO SALAD
A classic favorite full of texture and flavor. It is sure to have others asking for the recipe. Great for potlucks. Serves a crowd.
1 small can mandarin oranges
1 lg can crushed pineapple
1 small box sugar-free orange gelatin
1 small tub cottage cheese
1 tub sugar-free whipped topping.
Place all ingredients in a large bowl. Mix gently with spoon or spatula. Serve!
Best if prepared immediately before serving. Refrigerate after preparation. Try different flavor gelatins for a surprising twist!
For the lowest possible sugar content, use fruit that is canned in natural juice instead of syrup, or better yet use fresh fruit and crush the pineapple yourself!
