WAIT FOR ROOM TEMPERATURE
If you cook meat as soon as it’s out of the fridge, it can cause the meat to cook unevenly. If it’s cold, the meat will be underdone on the inside and overdone on the outside and who wants that?! Let the meat stand at room temperature for 15 to 30 minutes and this will allow for even cooking.
HIGH HEAT DEVELOPS FLAVOR
Quick cooking over high heat is the best way to get that brown sear with thick crust on all sides. Start by drying the meat, make sure the pan is hot, and don’t overcrowd the pan. The meat needs to be dry for best results, frozen meat will release more water. An overcrowded pan will cause the meat to steam vs brown. Browning is the perfect way to release the most amount of flavor.
LOW HEAT PERSERVES MOISTURE
There is a time and a place for low heat and slow cooking, usually when the cut of meat is a larger cut. The reason for this is because the slow cooking will allow the meat to heat the center without overcooking the outer layers.

Resting your meat might not seem that important but it really does a lot for you! The juices of the meat are located in the center so resting the meat allows them to redistribute throughout. It’ll also cut down on the amount of juice that leaks out when you cut into it.
